Dad's Favorite Chocolate Cake

Today is our patriarch, Mark's birthday!  We thought we'd celebrate him by sharing his favorite cake recipe.  This cake is vegan-friendly but everyone we've shared it with loves it!

INGREDIENTS:

 

2¼ cups all-purpose flour
2 cups organic cane sugar
1 cup organic unsweetened cocoa powder
2 teaspoons baking soda
½ teaspoon kosher salt
1 tablespoon organic vanilla extract
⅔ cup organic canola oil
2 teaspoons organic white vinegar
2½  cups boiling water


PREPARATION INSTRUCTIONS:
In mixing bowl, combine boiling water with the America's Classic teabags.  Sit on counter for 20 minutes then refrigerate (leave teabags in) - leave in fridge 4 hours, overnight is best.

When ready to bake, preheat oven to 350 and use 2 9" round pans with parchment paper lining the bottom.

Combine flour, sugar, cocoa powder, baking soda, salt in a mixing bowl.  Stir.  Remove tea concentrate from fridge and discard teabags.  In separate bowl, combine 2 1/4 cups tea concentrate with vanilla, vinegar, and oil

Whisk together the wet and dry ingredients together.  The mixture will look very wet - this is ok!
Pour 1/2 the batter into the lined baking tin.  Bake for 30 minutes or until toothpick comes out clean.

Let cool and frost/decorate and serve.
